Knolly's Rose Ceremony

This is one of those fascinating City ceremonies which originated back in the 14th century. Representatives of the Watermen and Lightermen as well as local clergy and dignatories have been making an annual pilgrimage to Seething Lane to cut a red rose from the garden in Seething Lane. Why?
